Clean Chocolate Milkshake

Have you seen the Tim Hortons billboard ads for their new “Frozen Hot Chocolate”?  Oh man!  They look soooooo good!  They had me at “chocolate”!  Since eliminating sugar from my diet I no longer crave sweets the way I once did.  BUT, when I drive by those billboards I suddenly feel tempted by the icy, frothy goodness!  I was experimenting in the kitchen today and came up with my own version of a frozen chocolate treat!  It turned out great!!  I can’t wait to make this on a hot afternoon!  If you are a chocolate lover like me, and have been missing it since eating clean- you will love this!!  🙂

2 Cups un-sweetend chocolate almond milk

4 Pitted dates

1/2 Tsp vanilla

1 Tbsp Cocoa powder

1/2 Tsp almond butter

2 Cups ice cubes

Pour all ingredients into a high powered blender and mix on high for at least 30 seconds.  Serve immediately!

This recipe would be great frozen into popsicles too!  I think I’ll try that next!

XO, Pam

Clean Chocolate Banana Bread

Breakfast is my most challenging meal of the day! For years (even recently) I would skip breakfast altogether. I know, I know, “It’s the most important meal of the day”.  But, for some reason I usually wake up with no appetite!  (trust me, it’s about the ONLY time of day that I don’t feel like eating!)  The problem with this is that I am typically famished by 10am!  You can guess what happens next- I am out running errands and am tempted to grab something, anything quick!  When you are out and about, a quick snack is often limited to fast food or unhealthy, pre-packaged foods.  When I started Clean Eating, I knew that this was one bad habit I was going to have to kick! I started my search for breakfast foods that I would find appealing at 6am when my sweet angels awake.  I started to think…”What am I always in the mood to eat?” The answer came swift and clear: Chocolate of course!! 🙂 This is a recipe that I worked to perfect and it tastes great!  Not only is it packed with chocolately goodness- it’s actually really healthy too!!!  This one is for all of you Chocolate Lovers!  You can eat Clean and still have your chocolate fix too!!

4 Ripe bananas

1/2 Cup coconut flour

1/4 Cup ground flax

6 Eggs

2 Tbsp Melted coconut oil

1/2 Tsp salt

1/2 Tsp Baking soda

1 Tsp Vanilla

1Tbsp Cinnamon

1/4 Cup Date butter

1/4 Cup chopped walnuts

3/4 Cup cocoa powder

Preheat oven to 350F.  Mix all dry ingredients (except nuts) together until fully combined.  In food processor mix together all wet ingredients.  Once wet ingredients are combined, add in the dry ingredients and mix once more.  Stir in the walnut and pour into a bread pan.  Bake for 45 mins to 1 hour (Depending on how big your loaf pan is) at 350F.

***TIP*** Let this sit for at least 20 minutes to cool. It may seem a little dough-y when it first comes out of the oven but firms up as it cools down.

I hope you love this bread as much as I do!

Clean French Toast Casserole

I saw a similar recipe in a cookbook and thought this looked delicious! I decided to “clean it up” and see how it turned out! This yummy dish did not disappoint! It is so delicious you will surely be able to fool your kid’s into thinking they are having an unhealthy treat! 🙂 It can double as either a breakfast dish, dessert, or both! The best part is, it was pretty simple to make! I made mine the night before and just popped it into the oven in the morning! Can I get an “amen” for easy, no fuss breakfast options?!
I hope you enjoy this as much as our family did! 🙂

2 Eggs, plus 4 egg yolks
1 Cup unsweetened coconut milk
1/2 Cup unsweetened almond milk
1/2 Cup date butter or apple butter
1/2 Tsp cinnamon

1 Cup blueberries
1 Loaf cinnamon raisin ezekiel bread

Cut bread into cubes and place on a cookie sheet. Bake at 350F for 20 minutes.

Combine eggs, milk, date butter, cinnamon and nutmeg in a bowl. Mix well with a whisk.

Grease a casserole dish with coconut oil and fill with bread crumbs. Sprinkle blueberries on top and pour the custard mix overtop. Cover and refrigerate for at least one hour or overnight.

Fill a large pan with 1 inch water. Place the baking dish with the french toast in the water bath. Cover with foil, cut a few holes for venting and bake for 30 minutes. Remove foil and back for a additional 40 minutes.

Clean Apple Crisp

My mother in law makes a killer apple crisp! When we were dating my husband often talked about his mother’s apple crisp and how much he loved it. I enjoyed the odd piece of apple crisp, but i wouldn’t call myself a “fan” of it. That is, until the day I tried a piece of my mother in law’s famous apple crisp! Let me tell you, it totally lived up to all of the hype! It was FANTASTIC! Sooooo buttery and crispy and yummy! I’ve been experimenting to create a “clean” version of apple crisp to satisfy the cravings for my mother in law’s (which is definitely NOT clean!) 🙂 Now this recipe is by no means an exact clean replica of hers, but it is delicious in it’s own right. This dessert hits the spot if you are craving a warm, cinnamon-y treat! I hope you like it!

1 Bag organic apples
1 Cups spelt flour
1 Cups oats
1 Tsp vanilla
2 TBSP orange juice
5 Pitted dates
1/2 Cup un-sweetend apple sauce
3 Tbsp water
1 Tbsp lemon juice
1/2 Tsp baking soda
1/2 Cup butter
1 Tbsp Cinnamon
1/2 Tsp Nutmeg

Peel and slice the bag off apples and put into a large bowl. In a blender or food processor add dates, orange juice, lemon juice, and apple sauce. Mix on on high until all blends into a very smooth consistency. Poor the contents of the blender or food processor over the apples, add the cinnamon and nutmeg and stir until all of the apples are fully coated. Pour the apple mixture into a square pan.

In a separate dish, mix together the flour, oats, 1/2 cup butter and vanilla. Mix well with your hands until a crumble forms. Sprinkle the crumble on top of the apple mixture. Put the dish in the oven at 400F for 45 minutes.

This dish is best enjoyed warm! I hope you love it!

Clean Pumpkin Spice Latte Recipe

Yes, you just read that!  CLEAN PSL Recipe!  One of the best things about fall and winter is the amazing warm drinks you wrap your hands around to get you going on those chilly mornings.  Now that I’ve switched to clean living, I don’t want to even drive by a Starbucks as they tease me with their PSL advertising! So, you can imagine how excited I was to find this recipe!  The original recipe is from, but they use artificial sweetener in their recipe.  You’ll see in the recipe below that I swapped it out for applesauce/apple butter.  Mmmmm I have a warm cup on the table beside me and it is DELISH!!!!

Pumpkin Spice Latte

1 Cup unsweetened almond milk

1/2 cup pumpkin puree

1 scoop vanilla protein powder (optional)

1 Tbsp vanilla

2 Tbsp applesauce or apple butter

2 Tsp pumpkin pie spice

1 cup coffee

Mix in your blender for 10 seconds.  You can pop it in the microwave to heat it up and drink it hot or pour it over ice to enjoy it as an iced latte.  Sprinkle the top with a little cinnamon for an extra special touch.

If it seems to thick, add a little more almond milk and/or coffee

Loaded Peach Yogurt

I’m sitting here eating one of my favorite snacks and thought I shouldn’t keep it to myself anymore!  It’s the perfect thing to eat after a workout or when you are looking for a light meal.  It’s satisfying and won’t leave you feeling too full or sluggish. 🙂

3 TBSP PLAIN Greek yogurt (Tip* Buy the plain Greek yogurt and then add a capful of vanilla extract.  Almost all vanilla flavored yogurt has sugar added to it.)

1 Sliced Peach

Sprinkle of cinnamon

1 TBSP Unsweetened shredded coconut

8 Dry nuts of choice (my favorite are cashews and almonds)

Scoop yogurt into a bowl and add sliced peaches.  Sprinkle coconut, cinnamon and nuts over the mixture and enjoy!

Oatmeal Apple Snack

Core and slice apple

Spread almond butter on apple slice

Sprinkle with some or all of the following;

Unsweetened coconut

Sliced pecans

High cocoa % chocolate chips (like I mentioned in my earlier blog)

Easy and delicious!!!
